Chia Jam, No Carmen :( Beef Stroganoff with Karen..

Good morning!  I can't believe it's Friday already! Where did that week go?!!! Anyway this will be a quick catch up because I don't know what we did this week hahah.  
One evening made Chicken Cordon Bleu...yummy and so
easy.  First time ever..baked veggies to go with.  

I do know Ken got his blood test and EKG out of the way, he's got a dr appointment on March 14th for his pre op physical. The month will fly I'm sure. 

We made a trip to Gardnerville to pick up prescriptions and then visit our favorite waitress, Carmen.  We got there, asked for her section and were told "Carmen is on extended leave" What?!!  Turns out she slipped and fell on the ice during one of the many cold and icy spells.  She hurt her shoulder, and guess they had to wait for the swelling to go down before doctors decided she will need surgery. :(  She is over 70 so it could have been worse.  She's a feisty little thing so hoping she'll be returning to work down the road.  She works because she enjoys it, not because she has to.  We will see.  We had a nice lunch anyway.  

I did experiment one day on some Chia Seed Berry Jam.  We are cleaning out the freezer so it can be defrosted.  I had some frozen strawberries, blackberries and blueberries that originally I thought I would make smoothies when the boys were here.  Took them and found a recipe for the jam. Turned out yummy and easy.  One jar in the frig and one in the freezer for later.  No sugar added! Bonus!

Yesterday (Thursday) we invited Karen over for dinner.  We watched an episode of Pioneer Woman and she made a beef stroganoff.  We decided to make it and instead of noodles we used spaghetti squash.  Ken asked what we had to go with it and I said, asparagus and squash or green beans.  He said "Don't we have something not so healthy?"  I looked at him and said "Well that's why we're doing spaghetti squash" He says "YOU are doing that" "Ok, what do you want?"  He says ....a baked potato...okie dokie! haha..in the end I made him and Karen some Au Gratin stove top potatoes as our power was out for a few hours in the afternoon.  Not impressed though from what they said. Oh well. The stroganoff turned out good.  Also I had a turkey cooking most of the day. I did say we were cleaning out the freezer.  No cooking for the weekend. :) 

After an hour or so of the power going out Ken did hook up the generator so the oven could continue cooking. Even though it's gas because of the electronic ignition it wouldn't work.  I could light the stove top but not the oven.  

We had a nice visit with Karen and with any luck we'll head for her house later today for a fire.  The winds have been awful, but today is starting out nice and quiet.

  1. Nice catchup, lots of food talk! Sorry about Carmen, hoping she heals quickly and is soon back doing what she loves. Serving you and Ken!! :)
    That jam sounds good, is it easy to make?

    1. Yes the jam is very easy from Pinterest...3 ingredient strawberry jam..berries, honey (which i didn't add as the berries were sweet) chia seeds..15 min tops! We are certainly going to miss Carmen!! :(

  3. Wonderful catch up, I hope Carmen heals quickly and gets back to work that she enjoys. Lots of food talk, Cordon Bleu is so easy to make and I always enjoy it. Jam sounds excellent. Stay warm!!

    1. You're so right the Cordon Bleu was so easy and I've never made it before! Will be on the list to make for sure! Definitely looking forward to warmer weather!

  4. The Cordon Bleu looks delicious and the triple berry chia seed jam sounds very good. Sorry to hear about Carmen hope she is back soon.
    Sounds like things are moving along for Ken still keeping our fingers crossed and praying there is a cancellation and he gets in sooner.

  5. WE wish! They only do this surgery on Mondays and with his DR appointment on the 14th I doubt it..but we will see. He's looking forward to it, but not the recovery time! But it really needs to be done! That chicken was so good and so simple, I know it will be on the list again!
