What to do with all this broccoli and several portabello mushrooms? Well, you Pinterest it and there's lots of recipes out there..so yummy...low carb and low cholesterol. Had some of the little casserole with leftover chicken Ken had cooked. So good.

I put together a different casserole for Monday night so we didn't have to cook. I cooked some pork to add to Ken's portion of the casserole for Monday night.
We spent Happy Hour with Jack, our neighbor's dog next door. He likes company and is kind of lonely during the day with no one home.
I was up by 0600 Monday morning so threw the casserole in the oven so it would cook while it was still cool temperatures. We wanted to leave for Reno by 1000. Ken's glaucoma surgery appointment wasn't until 1645 so we figured that would give us plenty of time to run around. As long as you're going might as well get all you can done as Reno is about 90 miles from here.
We stopped at US Bank to get the pink slip for the little fifth wheel. It has found a home with the girl who brought her uncle with the heart attacks up from Sacramento so he'd have a place to stay.
After that we headed by Total Wine, so I could buy some more of the italian organic wine, I've become fond of..haha. Then on to Cabela's. We got a 10.00 off if you spend $40.00 coupon in the mail. Ken bought $48.00 of ammo and got his $10.00 off. I'm thinking that'll be all we'll buy there, as it was bought out by Bass Pro shops and the prices and items have changed a lot. Couldn't even find any adult clearance racks! That just won't work, $36.00 for a t shirt..nope!
It was 1300 so we headed to Verdi and the little Gold Ranch Casino for lunch. Not too bad, we both had a grilled chicken breast sandwich only I got rid of the bread and just had the breast and a few french fries. Nice, no salt added.
When we got back to the car there was a message on my phone that they wanted Ken at the surgery center at 1515! OK..off we went and got there plenty early. Of course that took care of any Walmart shopping! They got him in quickly and then a wait for the eye drop to take effect. Pulled him in and within a few minutes he was back out. 4 drain holes were lasered into his left eye and off we went. He said it was pretty painful, but quick. I drove home and by the time we got home he was doing really well.

Happy Hour again over at Jack's place and then put him to bed. We came home and had our dinner and I have to say it was delicious with the added spaghetti squash.
Monday morning the alarm was set for 0500 so we got up and visited with our friends online and got the day going. I made some breakfast for the two of us and a tuna sandwich for Ken. He decided to head for CA and drop off the pink slip for the fifth wheel at Bryan's house. It was going to be a quick visit so I opted to stay home and get some things done.
A quick run to Raley's in town and then settled in the kitchen. Froze most of the broccoli that was given to us. Made the base for broccoli tots for dinner. Got two different kinds of muffins done. I went back to the Morning Glory muffins with flour for Ken and I found a flourless peanut butter low carb muffin for me. I used egg beaters instead of eggs so got rid of the cholesterol. Easy recipe made with natural peanut butter. We'll see in the am how they taste. Patsy, these are only peanut butter, banana, eggs, cinnamon, and i added a few raisins just because. I only made 1/2 recipe just in case I don't like em..but they smell good.

My Aunt Ola in Kansas passed away this morning. She's been struggling with Alzheimers for the last several years. She was Daddy's younger sister and just so sweet. She was the one who got the draft notice from the mailbox for my dad in 1942. She was crying so hard when she had to give it to him. They were always close :) I have the speckle ware melmac dishes just like she had when we were kids. The biscuits and gravy always looked so good on them! A wonderful memory.
Along with my older cousin Jeanie (66) passing away last week from cancer it's been a tough week or so for the Phillips (my side) family. Like my sister put it..there's quite a family reunion going on in heaven right now.

That's too cute about 'your" town. We do have the memories, long time ago. I hadn't seen my cousin Jeanie since 1970 as they moved to Alaska.
