Broccoli Crust Pizza recipe for my friends..Senior Ball, couple grandkid pics, bar b q!

Grandson Jacob and his girlfriend Alyssa attended Senior Ball last night. Such a cute couple and they've been together for most of their high school years.  Hard to believe high school is mostly over and Jacob will be graduating May 31st! 



49 years ago today Jacob's grandparents were attending Papa's Senior Ball!  He was a senior and I was a freshman! 49 years!!! ahhhh...sure doesn't seem that long ago.  


Friday morning I awoke still feeling happy about the doctor appointment on Thursday.  
We took our time getting ready and headed out at 1100! Yes, we took our time for sure! It was a beautiful morning in Winnemucca and warmed quickly.  We had a nice uneventful drive to Fallon, where we pulled over and I made a quick lunch. Ken had a sandwich and I had 1/2 a low carb tortilla and my version of a sandwich.  Delicious and now only an hour or so until we're back home.

but when we take our time..we take our time..haha. 


I liked this truck..No clue what's inside..from southern CA. 

We were home around 1430 and started unloading the trailer and getting settled back home. We texted with Karen next door and decided that we would see her Saturday afternoon for a bar b q.  We have had pork marinating so that would be the main dish.  

We enjoyed our evening and eventually called it a night.  

Saturday morning we roused ourselves out of bed and visited with our blogging friends online. Ken wanted mashed potatoes to go with the pork, so I decided to go with Pioneer Woman's recipe of Restaurant Style Mashed Potatoes.  A step up from regular.  Definitely not low carb or low fat haha.  I had a few carrots and some asparagus so those were going next door too.

next weekend.  Mom took him shopping and he looks
pretty darn sharp! 

Around 1630 we headed next door and had a very nice evening outside. Ken did the bar b quing and it was delicious!  Once the sun set, Karen started a fire in the fire pit and we visited some more.  Eventually we headed into her fifth wheel and had a delicious dinner! Her house is being worked on so basically it's a construction zone! Nice that she has her fifth wheel to live in while this work is being done!

Daughter in law Cheryl called to tell me about Adam's day working as a State Park Aid.  A little later Adam called to tell me about his day too.  Long story short, they called him on Friday and told him they were releasing him to work alone on Saturday! Wow..that was quick! So after working a full day, he's called on the radio to a broke down car in the canyon, he's in charge of being a Pilot Car..uh what?!  Then he's in charge of traffic control.  Mind you, he has no idea what he's doing, but he got broke in quickly!  After that he's taking the cash box back to the ranger office and sets off the alarm!  They took it all in stride and told him he's the first one this year to set the alarm off! haha. It was funny to hear Cheryl tell it, even funnier to hear Adam tell it!  Better him than me for sure!

Sunday morning, I was awake around 0500 but it's Sunday right?  Stayed in bed until 0600 and started the coffee, moved stuff in the living room so we could enjoy our reading.  About 0630 I got Ken up, no sense in letting him sleep the day the away right!? 

We've been invited to Izzie's house in town to celebrate Cinco De Mayo later this afternoon.  More good food and drink! It's supposed to be 83 in the afternoon so it will  be a wonderful warm day!

Tuesday, Ken has dr appointment for his 6 week check up after the shoulder replacement. He's hoping to get the sling off and start physical therapy! He's ready for some movement! Ha.

Since we've been home I've had some people ask me for the Broccoli Crust Pizza Recipe. Rather than message people separately thought I'd use the blog to do that. 


Broccoli Crust Pizza

Preheat oven to 400 degrees

1 large crown of broccoli that should yield 3 cups of finely chopped broccoli either
by hand or in food processor  (I've found it usually takes more than 1 crown)..

2 large eggs (I use egg beaters as I don't want the cholesterol from eggs)

1/4 c shredded Parmesean
!/4 c shredded mozzarella (really any cheese will work for both)

Chop the broccoli very fine or process in food processor.

Measure out about 3 cups of broccoli and put into microwave safe bowl.  Place bowl in microwave and heat 1 to 1 1/2 minutes. Recipe says to wring out broccoli, or place between paper towels. I don't bother as it seems the broccoli doesn't have must moisture (like spaghetti squash).  

Add eggs and any seasoning you want to the crust.  Sometimes I add a little crushed red pepper flakes or something else. 

Add the cheese and mix together. 

Line pan you're using with parchment paper and spray with Pam or oil.  Take the broccoli and dump it in the middle of the pan. Using your hands spread out and form a circle. It  should be about 1/4 inch thick or so.  Bake in preheated oven for 10 to 12 minutes until the edges are turning a light brown and surface feels dry. 

Remove from oven and top with your favorite items. Place back in for 10 minutes or so until cheese is melted. Remove and enjoy! 

It's a very forgiving recipe. After a few times you may find you don't need two eggs, or you might want to make a bigger pizza. I've had fun playing with it! And it's yummy!

  2. Sounds like you had a great time and always nice to be back on home turf. Love the picture of Grandson Jacob and his girl. He's grinning like that because of where his hand is! :) I also love the picture of you two. You look like just a babe! Were you even 10? haha
    I'm sure Ken is anxious to be in control of his movements and we wish him luck.

  4. Great family times and love the pictures. love that recipe and have also made it with cauliflower (you don't like cauliflower) I actually saw a cauliflower crust pizza in the frozen food section at a Walmart down south somewhere.

    1. No I just can't find a taste for cauliflower so it is nice there are a couple of other options other than regular flour crusts! I've noticed more of the veggie options in grocery stores too, but most have more sodium than I need. Still a good option though! Yep our grandkids are growing up!
