Sunrise, trip to Lowe's, getting a few things done here, CA tomorrow, Banana Apple Bread recipe!

Woke up this morning to a beautiful sunrise here in Yerington!

Not much going on this week, so we like it that way! LOL.  Yesterday we did go to Lowe's in Fernley to get the two sheets of metal roofing we needed to fix the front porch cover that was damaged by the storm a few months ago. 
The last two panels and one joist were damaged in the flying debris..

While I painted the joist, Ken poured these two areas of concrete for the front of the cab over
to strengthen the front nose..eventually there will be storage under the nose..

Ken got the metal roofing and the new joist on today so all is good and back to normal :)




Tomorrow we're hoping to head over to CA to watch Aaron's homecoming game. There's a storm coming over the mountain, but looks to be a warm one 😊 We have 4 wheel drive but with the way idiots drive they always end of closing the highway, so rain is good!

Anyway that's it for the week so I'll say have a great evening! Below is a recipe for Banana Apple Bread..as promised ladies (sorry it's late)...😋


                                               Banana Apple Bread
                                                 Low Carb Version


2 cups Almond Flour

2 overripe bananas (about 1 cup)

2 eggs (egg beaters or egg whites work too)

1 tablespoon melted coconut oil (or oil of your choice)

1 teaspoon baking soda 

1 tsp vanilla

1 medium apple chopped 

Grease or line a 9x5 loaf pan. Preheat oven to 350F

Mash bananas with a fork or in a blender/food processor. Add eggs, vanilla and oil stirring until smooth. 

Next, add almond flour, baking soda and mixing well.  

Stir chopped apple into the batter. 

Pour into pan and let cook between 35 and 40 min. Longer if needed. After it cools, run a knife around or lift out parchment paper to cut. :) Enjoy!

You can make muffins out of this recipe too, it will make 12 muffins baking about 20-22 min.  Insert tooth pick or knife until it comes out clean.  

I sometimes will add shredded carrots, chopped nuts and/or raisins to the batter. Yummier..It's an easy recipe, very forgiving. My favorite!  

**Almond flour and regular flour are a 1/1 substitute if you want to use regular. **
