Happy 19th Mason! Carson City, A comfort food kind of day at home!

 Yesterday the 31st we headed out early as Ken had to be in Carson City for an 0830 echocardiogram. As always they called him early and we were out of there before 0900. Carson Tahoe Cardiology is a great place with even better doctors. 😀 Next Wednesday he's got a followup with them and after that hopefully we can hit the road for a few weeks before the next appointment! 😁 Fingers crossed! 

We made a phone call from the parking lot to wish Mason a Happy 19th Birthday! Hard to believe our baby grandsons are turning 19! Aaron in March.

We left there and headed to Total Wine for a pick up order. I had 20% off winery direct wines (which is what I buy anyway) and then 20% off winery direct champagnes. I splurged and bought two bottles just for spoiling us purposes LOL. 🥂 I did buy some of my regular Cook's Brut too. Don't want to take a chance like last weekend of thinking we were out 😂😂

Then a trip to Walmart in Carson. We finished that at 1100 and since it was early we came home and had lunch here. 

We went our separate ways after lunch and then in the evening just enjoyed a fire and Happy Hour here at home. 

Today we awoke to cool and cloudy skies. Perfect day for comfort food. I've been wanting some cabbage lasagna for awhile now and this was the day. 

Never amounted to anything, but cool to watch! 


I use Sugar Free Mom's recipe off Pinterest and then tweak it for us. She doesn't add the veggies I do, but we like it. 

Boil the cabbage about 10 mins until it's bright
and beautiful. Drain on paper towels or towel
Veggies I had on hand. I ran them through a food processor
but they could
be chopped or diced

I cooked the ground turkey first, then added the veggies
to get some of the moisture out of them. 

Added cottage cheese and a little parm to the meat mixture,
along with jarred spaghetti sauce, grated some cheddar
and jack cheese. Recipe calls for ricotta, but grew up
using cottage cheese. 

Layer just like a regular lasagna using the cabbage leaves
as your noodles. 


Going into the oven :) We don't miss the noodles and 
Ken especially was never a noodle lover. 😄

Coming out of the oven, smelled so good! 
This is the sauce I use and it's delicious. I know Rao's is 
out there too but it's a lot more expensive. We like that 
there's no added sugar. 


While I was doing this Ken had his own thing going on in the garage.
He took some Conder Ranch ham steaks out of the freezer and decided
to use the Pit Boss to cook them.

Made some low carb cookies too 😁 Ok, now I'm done! LOL. It was a good day to be in the kitchen, looking out the window and watching the ever changing skies, listening to some real country music.  💙
Ken's are the butterscotch ones, so they aren't as
low carb as they should be. Mine are sugar free 
dark chocolate, so yummy! 


Time to get this done and fold some laundry before Happy Hour.
It was a great day just to stay home and get some things done.

    A nice day inside. Your lasagna looks good, i wouldn't be able to tell Bill there was cabbage involved, he likes the noodles. Ha ha!

  3. Happy birthday Mason. Yes Rao's is expensive. Ham steaks and butterscotch cookies sound so good. It's raining in Wellton so no fire for us.
